I have GUID columns in some of my tables and I'm wondering is there any point in having them declared as Case Insensitive? Will table joins and lookups be faster if they are declared as Case Sensitive?

Probably not.  For the ANSI/UNI collations, case-insensitive searches are
slightly slower due to the additional case considerations done during
comparisons.
