I need to know, if the server preserves opened/used sessions, if we
restart the server-service.

I mean, clients are working, we stop and start the server service, do
they find the sessions which were active before stopping the server and
can they work without restarting the client software?

No, if the serce is restarted the existing sessions are gone.
